The Search That Became Indigo Salt

The idea began at my family's table. My father was living with hypertension, and salt had become part of the daily conversation around food. Every meal seemed to carry the same question: how much salt is too much, and why does something so ordinary create so much confusion?

That question led me into the chemistry of salt. Ordinary food salt is mainly sodium chloride. Sodium is essential, but public-health guidance consistently warns that many people consume too much of it. Potassium is also essential and is naturally present in vegetables, fruit, legumes, dairy, fish and many other foods. The relationship between sodium, potassium and health is important, but it is also more complex than replacing one white powder with another.

I started looking at naturally occurring edible salts through a different lens. I compared composition, purity, grain behaviour, flavour and origin. During that search, I encountered rare blue and indigo formations within rock salt. Some were nearly clear with a blue centre. Others carried violet zones, cloudy edges or deep colour trapped inside the crystal. They appeared only in small quantities, and no two pieces looked the same.

The discovery changed the project. Over the following years, we gathered samples from different deposits, compared them and developed a method for selection and blending. The research was led from Sweden and included academic and specialist collaboration. The purpose was to understand the material well enough to create a consistent culinary product without removing the natural variation that made it remarkable.

That work became Indigo Salt. Today the collection includes coarse and fine salt for daily use, whole crystals for grating at the table, refills and gift sets. The original question remains part of the company, but Indigo Salt is sold as food, not as a medicine. It is a carefully selected natural material made useful for the table.
